ingredients
1 1/2 cup flour
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/2 cup soft butter or margarine
1 cup brown sugar
1 egg
3 medium mashed bananas
1 teaspoon vanilla extract
1 1/2 cup raw, quick-cooking oats
3/4 cup (total) chopped nuts, raisins, and dates (optional)
directions
Preheat oven to 425 degrees F. Grease and flour 13x9 inch baking pan.
Sift together: flour, salt, soda and spices, set aside. In large bowl, beat until light and fluffy: butter, sugar, egg. Add bananas and vanilla beat until smooth.
Gradually stir in flour mixture and oats until well combined. (If it seems to be getting a little thick, slowly add about 1/4 cup non-fat milk as needed.) Stir in nuts etc. Bake until golden (about 25 minutes)

February 10, 2017I used 1/4 cup applesauce and 1/4 cup oil instead of the butter. These were excellent. Because I did not use butter, I just dumped all of the ingredients in a large mixing bowl and stirred it up. Less dishes and more kid helper friendly that way.

January 13, 2015Snowed in at the inn ;) and the kids were anything but happy campers. No Xbox and no cable make the Johnsons go bananas! It may have been freezing outside, but this sassy family had a serious case of cabin fever. Board games, party games, crafts, nothing seemed to help. We had one trick left up our sleeves: a seriously stocked fridge. this would be no ordinary meal. We would not be put into boxes such as 'dinner' or 'breakfast.' No, this was going to be food as art, entertainment, leisure and love. We leapt online and ran smack dab into this recipe on our first search. Was it the chosen ingredients? google? fate? We weren't here to ask questions -- we were here to cook! this recipe was so fast and easy that our co*cker spaniel Woofus Roofus could have leant a paw, but i had a feeling that things would get hairy if he did, so we got to cookin (good lookins), and about 35 minutes later we gave the treat, ohhhh, 3 minutes to cool before we dug in and burned ourselves to cool off. How, you ask? Well let me tell you, there's no cure for cabin fever like CD Kitchen's Banana-Oatmeal Breakfast Bars!

September 30, 2014I've tried four different oat bar recipes this month. This was the best! I added two egg whites. I also substituted the butter with olive oil and applesauce to make them more diet friendly. Loved them!

September 21, 2009I made this for my friends for breakfast because we carpool to school together. They loved it and so did I! It's so healthy. I halved the recipe and used 1/4 c butter and 1/4 cup apple sauce to lower the calories a bit (a lot) and it ended up being 141 calories per bar! :) I put in pine nuts, walnuts, dates, raisins, and craisins. I hope my parents enjoy the ones I stuck in the fridge. :)

July 24, 2009These are great! I don't know why I wasted my money on boxed breakfast bars before. These are just as delicious and easy to make. I did make some changes as the others did, I used peacans and dates, and added wheat germ for added fiber. I baked then on a cookie sheet so they resembled a "bar"... Enjoy!!

October 3, 2007Thought the bars were great. I mixed up the recipe a little by adding slivered almonds and craisins. Also, instead of all the flour, I added bran cereal to make them healthier. I must say, they're delicious when frozen!

August 6, 2007These breakfast bars are great, but I made a few substitutions and additions. I used olive oil instead of butter (as I can't eat dairy. Also I added golden flax seeds, toasted sunflower seeds and dried cranberries! They last a long time in the fridge too.

September 24, 2006These had good banana flavor and were just sweet enough. I think they were a tad dry. Maybe some applesauce or another egg would add some moisture. My children loved the bars for breakfast, though.
