Technically, the definition of Lazy Keto is: Limit your carbohydrates to 10% or less of your daily caloric needs.

My definition is: I’m going to eat low-carb but not freak out about it and the recipe should be easy and the cooking time on the shorter side.

So, here’s the plan.

On the commute home, you’ll stop at your favorite store to grab filet mignon or top sirloin. Oops, did I just lose you and you’re thinking “I want to get into my comfy clothes, I don’t have time for the grill tonight”?

No. Grill. Needed. For. Perfection!

Remember – you’re a master chef now and not all chefs use a grill for meat.

Ok, we’re back at the store and we’re going to grab our meat and a side dish. I almost always pair my steak dishes with cheesy spaghetti squash. Leave a comment if you want that recipe. I’ve planned ahead and defrosted some Omaha Steaks. Do you remember this brand? Growing up, my mom and dad would gift boxes of these to my grandparents. Lazy Keto Recipes For Beginners

Some may say that the perfectly cooked steak is not an amateur’s game. I disagree! Allow me to steal some words from David Chang and Peter Meehan in their book, Momof*cku: A Cookbook.

You’ll find these words of wisdom under their recipe for a Pan-Roasted Dry-Aged Rib Eye:
Season It.
Sear It.
Roast It.
Baste It.
Rest It.
Slice It.
Eat It.

Ok, sure, there are some elements that you’ll need to work on to perfect your dish. For me, learning about my apartment’s stovetop output vs my cast iron pan was a learning curve. But there were 4 steaks in that glorious Omaha box so I was up to the challenge. Practice makes perfect and perfect, in this case, is insanely delicious and juicy.

Here’s what you’ll do. You’re back from the store and you’ll place the meat you intend to cook on the counter to warm it to room temperature. Why? You can look that up here courtesy of Bon Appetit. But right now, there are more pressing matters. Your comfy clothes. Time to unwind from the day.

When you’re ready to begin and the meat is no longer cold, turn the oven on to 400 degrees and get out your cast iron pan (no grill needed tonight), some simple seasoning, a little oil, and a pad of butter.

Omaha Steaks sent their classic steak rub in the variety box I got. I used that to season both sides of my sirloin.

Weight Loss Meals, Dinner Edition

On medium heat, I let the cast iron pan get hot enough that the oil spread quickly and loosely when I added it to the pan. I then placed the meat and didn’t touch it for 4 minutes. You’ve got to leave it alone and let it sear.

Next, I flipped the steak over and let it go for another 2 minutes. Here’s a picture just before I added butter and let it go another minute or so basting the meat before placing it into the oven. Yes, yes, I have reversed the basting/roasting step. Don’t come for me, Momof*cku!

How can something that good-looking aid in losing weight? Well, you’re here so you know the answer!

5 minutes is all it took in my oven to produce the internal temperature I wanted.

I then let it rest for about 8 -10 minutes while I heated the spaghetti squash and picked out a movie.

Perfectly Cooked Top Sirloin (no grill needed)

Seared Outside, Juicy Inside, Add This To Your Favorite Lazy Keto Recipes

Servings: 1

Ingredients

  • 1 6 ounce Top Sirloin or Filet Mignon
  • Your Favorite Steak Seasoning
  • 2 T Avocado Oil
  • 1-2 T Butter

Instructions

  • Let your meat rest until close to or at room temperature

  • Preheat the oven to 400 degrees

  • Pat dry the meat and coat it with your favorite seasonings

  • Preheat a cast iron skillet on the stovetop over medium to medium-high heat and then add the avocado oil

  • Add the meat to the cast iron pan and leave it alone for 3-4 minutes

  • Flip the meat and let it sear for another 2 minutes and then add the butter and baste it for another minute before placing it in the oven

  • Bake in the oven for an additional 3 - 5 minutes reaching the internal temperature of your preference

  • Remove from the oven and let the meat rest (outside of the cast iron skillet) for 8 to 10 minutes before serving
