These are delicious, soft, light, Almond Pillow Cookies with almond paste filling, and an amazing almond aroma. Almond Pillow Cookies are one of our family’s favorite holiday treats. Usually, I use homemade almond paste for this recipe, but you can use store-bought almond paste. Make these cookies and you will find that they have a unique taste.

How to make Almond Pillow Cookies?

  1. In a large mixing bowl, beat 1 cup of softened butter with ½ cup of sugar using an electric mixer for 2 minutes or until creamy.
  2. Add one egg yolk, 1 tbsp of milk, and 1 tsp of almond extract to the creamy butter. Mix until combined.
  3. Gradually add 2 ¼ cups of flour (a few tablespoons at a time) to the batter. Mix until combined and chunky. Cover this mixing bowl with plastic wrap and place it in the refrigerator. Chill for at least one hour.
  4. In another mixing bowl, mix together 8 oz almond paste, ½ cup of sugar, one egg yolk, 1 tbsp of milk, and 2 tsp of almond extract.

  5. Preheat oven to 350°F. Line a baking sheet with parchment paper. Remove the almond pillow cookie dough from the refrigerator. Scoop up a ball using a cookie scoop or ice cream scoop. Roll the dough into the ball. Then, flatten the ball and place a tablespoon or teaspoon (depending on the size of your cookie scoop) of almond paste filling in the center of the ball. Form the ball again until the filling is completely covered with the dough. Place the almond pillow cookie on the prepared baking sheet. Then flatten it lightly. Repeat with the remaining dough. Bake in the preheated oven for 15 minutes.

  6. Let the almond pillow cookies cool completely on the cooling rack. Then, dust with powdered sugar. Enjoy!

    These are delish!!! Im a HUGE marzipan fan, so these spoke to me.
    They were very easy to make once I nailed down my filling technique. I’m not much for baking, but these will be on my regular Christmas cookie list. My mod: I pressed them down a bit before baking using a flat-bottomed glass dipped in granulated sugar instead of the powdered sugar dusting.

    Made these today and they taste awesome. They are very fiddly to make however. I left the dough in the fridge for about 5 hours but then it was too stiff to work with and kept cracking over the filling. As it set out for awhile it was easier to work with but then got a little sticky. I got 28 cookies out of the dough but have probably a third of the filling left over. These are tasty enough for me to try to work out the kinks.

    I made these cookies too big ! They came out looking like white biscuits . I put them in the refrigerator hoping that they will firm up. I enjoyed making them but the way that this first batch turned out I’m going to try again. Super easy to follow recipe. I definitely need a do over 😀
