Soft Caramel Snickerdoodles Recipe (1)

I have always loved snickerdoodle cookies, but when you put a gooey caramel in the middle as a little surprise, you take it to a whole new level.

Every day when we would get home from school, our mom would have an after school snack ready for us. Some days it was fruit, or vegetables, or crackers, but some days, she would have warm cookies for us.

Those were always the best days. My favorites were Snickerdoodles, but I bet these would have been my favorite if we had known about them back them.

That little touch of soft melted caramel is so yummy and so easy to add.

Our cute friend Jamielyn from I Heart Naptime just released her cookbook, The I Heart Naptime Cookbook.

I am sure that you have seen all of Jamielyn?s amazing creations on Pinterest (such as her Infamous Jell-o Cookies!) and I am always blown away by her amazing creativity and talent.

This book is loaded with over 100 recipes that can be thrown together in less than an hour (like while your children nap) and they all look and taste amazing.

These cookies definitely didn’t disappoint! They were soft and chewy – the way a snickerdoodle should be, but that gooey caramel in the middle sent them over the top.

This book is absolutely beautiful and every recipe is family-friendly – this is definitely a book you want to add to your collection.

  • Really any pre made and packaged caramel you find at the store would work for this recipe, but I prefer using Kraft caramels.
  • They are the perfect shape, and they melt nicely in these bad boys.
  • We have also made these cookies using Rolo candies and they were also delicious and super easy to press into the cookie dough.

Ingredients

  • 1 cup unsalted butter (room temperature)
  • cup sugar divided
  • cup packed light brown sugar
  • 2 eggs
  • teaspoons vanilla
  • 3 cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • teaspoons ground cinnamon
  • 12 soft caramels quartered

Instructions

  • Preheat the oven to 350 degrees.

  • Line two baking sheets with parchment paper.

  • In a large bowl, using a hand mixer, cream together the butter, 1 cup granulated sugar, and the brown sugar. Add the eggs and vanilla and beat until smooth.

  • In a separate bowl, whisk together the flour, salt, baking powder, baking soda, and cream of tartar. Add the flour mixture to the butter mixture and stir until smooth. Cover the dough and refrigerate for 10-15 minutes.

  • In a small bowl, mix together the remaining 1/4 cup granulated sugar and the cinnamon. Roll the dough into 1 1/2 inch balls. Make an impression in the top of each cookie with your thumb and place 2 caramel pieces in each cookie. Pinch the top closed and roll the dough into a ball around the caramel. Roll the cookies in the cinnamon-sugar mixture and place on the prepared baking sheet about 1 inch apart.

  • Bake for 10-12 minutes, or until the edges are slightly crisp. You want the centers to still be soft. Let cool on the baking sheet for 3 minutes and then transfer to a wire rack.

  • Store in an airtight container at room temperature for up to 3 days.

FAQs

What is the difference between hard caramel and soft caramel? ›

If the caramel forms a pliable soft ball, for instance, it's around 240°F. If it forms a hard ball, it's between 250°F to 260°F, etc. Sometimes recipes will even use the descriptors below to specify the stage your caramel should be cooked to.

Why is my caramel candy too soft? ›

If caramels are too soft, that means the temperature didn't get high enough. Again place the caramel back into a sauce pan with a couple of tablespoons of water and heat to 244°F. If you don't have a candy thermometer, you can test with a cold water test. Details on how to use this method can be found here.

How long does it take for caramel to harden? ›

Give your caramel at least two hours to set, or overnight if possible. You can also pop caramel into the fridge to help it set up faster. The caramel will sweat a little when brought out of the fridge, but will still taste fine. If you don't eat it right away, here's how to store caramel.

How do you make caramel less sticky? ›

Lack of emulsifiers – The addition of mono and diglycerides (generally 1-1.25%) will produce caramel that is less sticky.

How do you know when soft caramel is done? ›

For soft caramels 238F is the perfect temperature. I like to use a candy thermometer while I'm stirring/cooking the caramels then MOST IMPORTANTLY double check the temperature with an instant thermometer. Be sure to check the temperature in the middle of the caramel mixture!

What are the three types of caramel? ›

Caramel can be produced in so many forms such as, sauce, a chewy candy, or a hard candy because of how much of an ingredient is added and the temperature it is being prepared at.

Why is my homemade caramel so hard? ›

The water evaporates, leaving sugar crystals behind. If even one sugar crystal falls back into the pan of cooking caramel, it starts a chain reaction of sugar crystals and the entire pan will harden. The result? Gross, grainy caramel that is unusable in most recipes.

How do I get my caramel to harden? ›

Refrigerate until cooled and hardened. (Best if you refrigerate them overnight, or for several hours. They will be easier to cut and wrap). The caramel will seem hard in the fridge after they're set, but they should be soft at room temperature.

How do you know when caramel is done with condensed milk? ›

Bring it to a simmer over medium heat. Stirring occasionally, simmer for one-and-a-half to two hours, until the milk becomes thick and reaches the desired caramel color.

Why is some caramel hard and some soft? ›

Temperature is key when making candy. The difference between a soft caramel and one that's hard and overcooked is all in the temperature. Candy thermometers—like this instant-read thermometer—let you know exactly what stage the caramel is in (thread, soft-ball, firm-ball, hard-ball, soft crack or hard crack).

What happens if caramel isn't thickening? ›

Add more sugar to the sauce.

Most caramel sauces are made by caramelizing sugar and adding milk and a little salt. If you increase the amount of sugar in the recipe you'll end up with a thicker caramel. Try increasing the sugar by about 1/3.

What does vinegar do to caramel? ›

Add acid. Acid ingredients (like vinegar or lemon juice) can help prevent re-crystallization which causes caramel to become grainy. Acid physically breaks the bonds between the glucose and fructose molecules that form sucrose and ensure that it stays apart.

Should you stir sugar when making caramel? ›

Sometimes other ingredients are included, like corn syrup or water. Either way, once the crystals are melted, they do not want to be agitated. Instead of stirring, you gently swirl the melted sugar around in the pan to keep it moving and avoid burn spots.

Does caramel harden in the fridge? ›

Plus, popping it in the fridge will keep your caramel sauce fresher for longer. The caramel sauce will harden slightly because of the introduction of a colder temperature, but storing it in a proper container in the fridge will keep it fresh and ready to use for 2 to 3 weeks.

What makes caramel go hard? ›

The water evaporates, leaving sugar crystals behind. If even one sugar crystal falls back into the pan of cooking caramel, it starts a chain reaction of sugar crystals and the entire pan will harden. The result? Gross, grainy caramel that is unusable in most recipes.

What is hard caramel made of? ›

For hard caramels, you'll need 1 cup light brown sugar, ½ cup unsalted butter, and 1 teaspoon of fine sea salt. Make syrup. In a heavy-bottomed saucepan, add butter and melt over medium heat. Add sugar and salt, and stir to combine.

What is the difference between wet and dry caramel taste? ›

Wet and dry caramel are both delicious and versatile confections that can be used in a variety of sweet treats. While wet caramel is a little easier to make and is a good choice for recipes that call for a liquid caramel, dry caramel is a great option for those who want a thicker, more intense caramel flavor.

What are the two types of caramel? ›

When creating caramel, there are typically two different versions: wet caramel and dry caramel. Wet caramel refers to caramel that has been made by adding water to the sugar during the heating process.
