This really is the best Christmas co*cktail or mocktail for a party or gathering this holiday season. Make a pitcher or an individual drink with a few simple ingredients, then top with rosemary sprigs, sugared cranberries, and a lime wedge for a beautiful and delicious beverage. This creamy coconut margarita is the perfect holiday co*cktail!

Ingredient Notes

  • coconut water
  • coconut milk: Use a can of unsweetened coconut milk or coconut cream and add some water.
  • non-alcoholic tequila: or Blanco tequila for the co*cktail version. Gold tequila also works, if that’s what you have on hand. If desired, you could add a splash of coconut rum as well.
  • coconut syrup: I prefer sugar-free. You can also swap this for simple syrup or agave syrup. I don’t recommend using cream of coconut as it’s incredibly sweet and full of sugar. It’s better to use coconut milk and adjust the sweetness to taste.
  • fresh lime juice
  • fresh cranberries and a rosemary garnish
  • crushed Ice
  • Olipop lemon-lime soda: Or sparkling water.
  • Coarse salt or sugar: To add a little bit of salt or sugar to the rim of the glass.

Step-by-Step Instructions

  1. Add all of the mocktail/co*cktail ingredients except for the garnish and Olipop to a co*cktail shaker and shake vigorously for 20 seconds.
  2. Add crushed ice to a 12 oz. glass and pour the shaken drink over the ice. Leave a little room at the top and add a splash of lemon-lime soda or sparkling water of choice.
  3. Garnish with cranberries, fresh rosemary sprig, and a lime wedge if desired. Enjoy!
